W320 is the most widely used cashew grade in the world. The W stands for whole kernels and 320 is the count per pound, about 706 kernels per kilogram. Each kernel is medium sized, which makes W320 the practical workhorse for Indian kitchens.
This is the grade to buy when the cashew disappears into the dish: kaju katli and sweets, cashew paste for gravies, baking, and breakfast bowls. Since the kernels get chopped, ground, or blended anyway, the medium size is exactly right, and the lower price per kilogram means you can cook generously. For snacking whole, step up to W240 or make it special with W180.
