The cashews sold as “raw” are not truly raw, and the roasted ones are not always roasted the way you would want. Both facts matter for what you buy. The short version: plain (what most shops call raw) keeps the cleanest nutrition and the longest shelf life, while roasting is about flavour, best done at home where you control the oil and salt. Here is the full picture, and why every grade we sell, from everyday W320 to jumbo W180, ships plain.
First, a myth: “raw” cashews are already processed
A genuinely raw cashew, straight from the shell, is not safe to eat: the shell contains a caustic oil (urushiol, the same irritant family as poison ivy) and the kernels are steamed or roasted during processing to remove it. So the “raw cashews” you buy have already been gently heat-treated to be safe; “raw” here means unroasted and unseasoned, not untouched. Everything we sell is this plain, unroasted kernel.
Nutrition: how much does roasting change?
Less than the internet suggests, with a few honest caveats.
| Plain (unroasted) | Roasted | |
|---|---|---|
| Calories, protein, fibre | Baseline | Almost unchanged |
| Healthy fats | Fully intact | Slightly reduced if roasted in cheap oil (which adds other fats) |
| Some heat-sensitive vitamins | Slightly higher | Slightly lower |
| Added salt / oil | None | Often significant in commercial packs |
The kernel itself barely changes. What changes it is what gets added during commercial roasting: oil the label rarely names, and salt that pushes sodium up fast. That is the real raw-vs-roasted health gap, and it is about the additions, not the roasting.
Taste and shelf life: the practical trade
- Taste. Roasting deepens flavour and crunch. Plain kernels are milder and creamier. Neither is better; it is preference.
- Shelf life. Plain wins clearly. Roasting exposes more of the kernel’s oil to air, so roasted cashews go stale faster, and salt attracts moisture. Plain kernels, kept airtight, last the longest. Our full storage guide covers the numbers.
Why we sell plain, always
Two reasons, both about control. First, plain gives you the choice: eat them as they are, or roast and season exactly to your taste at home. Second, plain lets the cashew’s own quality show. Commercial roasting and heavy salting are also, bluntly, where tired or lower-grade kernels get hidden; the coating covers the flat taste of old stock. A plain kernel has nowhere to hide, which is the honest way to sell a cashew you are proud of.
How to roast cashews at home (four minutes, no oil)
You do not need oil, and you certainly do not need much salt.
- Dry pan. Medium-low flame, no oil. Add the cashews in a single layer.
- Keep them moving. Stir constantly for 3 to 5 minutes until pale gold. They colour fast at the end, so do not walk away.
- Off the heat early. They keep cooking in the hot pan; pull them a shade before the colour you want.
- Season lightly, warm. A little salt, or pepper, or a pinch of chaat masala, tossed while warm so it sticks.
Oven method: 170C for 8 to 10 minutes, shaking the tray once. Either way, roast small batches fresh rather than roasting a kilo that then goes stale.
Which grade for roasting?
For snacking, roasted or plain, size is the experience, so the larger grades reward you most: a roasted W180 jumbo kernel is a genuinely different pleasure from a small one. For roasting cashews that will be chopped into a dish, W320 is the sensible choice. The grade ladder is explained in full in our grades guide.
Frequently asked questions
Are raw cashews healthier than roasted?
Plain (unroasted) kernels keep marginally more heat-sensitive nutrients and avoid the added oil and salt of commercial roasting. The kernel’s core nutrition barely changes; the health difference is mostly about what roasting adds.
Can you eat raw cashews straight from the pack?
Yes. The “raw” cashews sold in shops are already steamed or gently heat-treated during processing to be safe. Truly raw, in-shell cashews are not safe to eat.
Do roasted cashews last as long as plain ones?
No. Roasting exposes more oil to air and salt draws moisture, so roasted cashews stale faster. Plain kernels, stored airtight, keep the longest.
Why does Cube Root only sell plain cashews?
So you control the seasoning, and so the kernel’s real quality shows. Heavy roasting and salting are where lower-grade or older kernels are often hidden; we would rather sell a clean kernel you can judge for yourself.
Is it better to roast cashews in oil or dry?
Dry-roasting in a pan or oven is cleaner and lets you control salt. Commercial oil-roasting adds fats you cannot see and shortens shelf life.
